At our favorite Mexican restaurant, my husband and I get Chorizo Queso to dip our tortilla chips in. It’s basically queso mixed with chorizo sausage. That is the inspiration behind this new dish, Cheesy Chorizo Baked Chicken.

One pan dinner of chicken, chorizo, and cheesy queso

Ingredients

  • 4 thin cut chicken breasts
  • 1 Tbsp olive oil
  • 1 Tbsp taco seasoning
  • 1 pound ground chorizo sausage
  • 1 15 oz jar queso
  • Optional toppings: tomato, cilantro

Instructions

  1. Brush both sides of the chicken with olive oil and sprinkle with the taco seasoning.
  2. Place the chicken in a casserole dish and bake in a 400-degree oven for 25 minutes.
  3. Note: Increase bake time if using regular cut (not thin cut) chicken breasts,
  4. As the chicken bakes, cook the chorizo in a skillet over medium heat for 5 to 8 minutes, breaking it apart as it cooks. Drain on paper towels to remove excess grease.
  5. When the chicken is done, top the chicken with the cooked chorizo and pour the queso over top. Bake an additional 5 minutes. Serve with tomatoes and cilantro over the top if desired.
  6. Note: This is very good if served with warm tortillas and/or tortilla chips.
