INGREDIENTS :
550 g flour
80 g caster sugar
1 teaspoon of salt
2 eggs
25 g baking powder
2 packets of vanilla sugar
25 cl of warm milk
150 g of butter
For the chocolate dough :
3 tablespoons of cocoa powder
For the ganache:
100 g dark chocolate
3 tbsp. fresh cream
For the decoration:
Granulated sugar
Chocolate chips, sprinkles and candies
PREPARATION
1* In a small bowl, place the yeast, a little caster sugar and warm water.
2* Let stand a few minutes.
3* In a large container, place the flour, salt, vanilla sugar, caster sugar, eggs and warm milk.
4* Work all the ingredients until you obtain a homogeneous and sticky dough.
5* Knead the dough, incorporating the butter as you go.
6* Take 1/3 of the dough and work it with the cocoa powder.
7* Cover the two doughs and let them rise.
8* Assemble the brioche as shown in the video.
9* Let the dough rise a second time.
10* Bake the brioche in a preheated oven at 180°C for about 35 to 40 minutes.
11* Melt the chocolate in a bain-marie and add the cream to obtain a nice ganache.
12* Let the brioche cool before unmolding it.
13* Decorate the brioche with the ganache, granulated sugar, vermicelli, chocolate chips and candies.
14* Good to know: the dough is very sticky, to facilitate its handling, use cocoa powder for the chocolate dough and flour for the white dough.
