Ingredients :
- 4 SERVINGS
- 4 large potatoes (peeled and quartered, yellow or russet, about 2 pounds)
- 3 Tbsp. olive oil (extra virgin, separated)
- 4 cloves garlic (coarsely chopped)
- 2 onions (medium, sliced)
- 1 pinch red pepper flakes (optional)
- 4 Italian sausages (cut into thirds)
- 1 red pepper (trimmed and sliced)
- 1 yellow pepper (trimmed and sliced)
- 5 green onions (sliced)
- 1 1/2 tsp. paprika
- salt
- pepper
- 4 Tbsp. Italian flat leaf parsley (fresh and finely chopped)
Instructions :
1.First, preheat oven to 400F
2.Next, spray the inside of a large baking pan with cooking spray. Put all ingredients in the baking pan and mix together so the olive oil and seasoning coats the sausage, potatoes, onions and peppers.
3.Last, bake in preheated oven for 40 min or until the potatoes are golden brown and sausage is cooked through.
