INGREDIENTS
- 2 chicken drumsticks, skin on
- Generous squeeze of lemon
- 1 tablespoon olive oil
- 30 milliliters red wine vinegar
- 1 heaped teaspoon cayenne pepper
- 2 cloves of garlic, minced
- 1 heaped teaspoon paprika
- 1/4 teaspoon salt
- 1 heaped teaspoon chili flakes
- Spicy rice
- 250 grams cooked rice, hot
- 1 tablespoon tomato paste
- 2 spring onions, thinly sliced
- 1 tablespoon coriander, finely chopped
- Salt & pepper
- Pinch chili powder
- Squeeze lemon
INSTRUCTIONS
- Slash through the skin of the chicken with a sharp knife and lay on a baking sheet. Mix all the marinade ingredients together and brush over the chicken. Bake for 20m at 190c.
- To make the spicy rice mix all of the ingredients together in a medium-sized bowl and serve straight away.
